With over 20 years of experience in the culinary arts, Chef Daniel Wong has spent more than nine years at The Ritz-Carlton, where he honed his expertise and refined his philosophy. At Jin Xuan, he seamlessly blends classic Cantonese cuisine with innovative techniques, while consistently embracing sustainability and responsible gastronomy. Committed to sourcing the highest-quality ingredients, cooking is at the heart of his life. He travels with his wife at least twice a year, exploring local food markets and personally preparing fresh ingredients wherever he goes.

The Early Years

Growing up in Hong Kong, a gourmet paradise, Daniel developed a passion for fine cuisine from an early age. At 14, he began apprenticing at a local Cantonese restaurant. Through years of dedicated practice, he mastered the art of Cantonese cuisine and realized in his early 20s that culinary arts was his true calling.

1978-2000

Leading with Passion

Daniel began his career as a culinary leader at Lei Garden, a renowned Cantonese restaurant, in 2005. Within two years, he was promoted to executive chef, overseeing kitchen operations across four Hong Kong branches, three of which he helped open. Under his leadership, the restaurant earned Michelin stars in 2009 and 2010. During this time, he also collaborated with the pre-opening teams for Lei Garden locations in Beijing (Jinbao Tower), Shenzhen, and Singapore Chijmes.

2005-2010

Becoming A Master

Before joining The Ritz-Carlton Shanghai, Pudong, Daniel Wong served as Executive Chef of Chinese Cuisine at No. 1 Wai Tan Yuan, managed by the Shanghai Peninsula Group. His menus received widespread acclaim and were showcased to distinguished guests at prestigious events, highlighting his skill, creativity, and dedication to exceptional Cantonese dining.
